Stewed Chicken

Ingredients

  • half of a chicken (cut into pieces)

  • 2 tablespoons oil

  • ½ cup sofrito (recipe on website)

  • ¼ cup tomato sauce

  • ½ cup canned red pimientos, roughly chopped (pimientos morrones)

  • 3 minced cuban oregano leaves (optional)

  • 1 teaspoon oregano

  • 1 tablespoon Spanish salad olives (pitted) or capers

  • 1 chicken bouillon cube

  • ½ sazón packet

  • 1 tablespoon tomato paste

  • ½ tablespoon adobo (or to taste)

  • water

  • 2 potatoes (cut in large pieces)

Directions

  • Heat a pot over medium. Into the pot add oil, sofrito, tomato sauce, pimientos, cuban oregano, oregano, olives, bouillon cube, sazón, tomato paste and adobo.  
  • Stir and when it begins to simmer add chicken.
  • Mix well to season the chicken. 
  • Heat chicken for a couple of minutes stirring to prevent sticking. 
  • Next, add enough water to cover the chicken; about 2 cups.  
  • Then add the potatoes and cover.  
  • Stir occasionally.  
  • Cook for 30-40 minutes or until the chicken and potatoes are done. 
  • Sprinkle with minced cuban oregano, optional.
