Easy Vanilla Loaf Cake

This Loaf cake is so soft and pairs well with a cup of coffee or tea.

Ingredients

  • 2 cups all purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup sugar

  • ½ cup butter or margarine (melted)

  • ½ cup vegetable shortening

  • 2 eggs

  • 1 teaspoon vanilla extract

  • 1 teaspoon lemon juice

  • ¼ cup milk

Directions

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a large bowl, sift flour, baking soda and salt.  Whisk to combine and set aside.
  • In another bowl cream together sugar, butter and shortening.
  • Next, mix in the eggs one at a time.
  • Stir in the vanilla and lemon juice and mix to incorporate.
  • Add flour mixture a little at a time alternating with the milk.
  • Mix together until smooth. Using a hand mixer is much faster.
  • Pour into a greased loaf pan. 
  • Shake the loaf pan and run a knife down the center.
  • Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
  • Leave to cool for 30 minutes then remove from the loaf pan.
