Peanut Brittle

2 cups white sugar
1-½ cups water
¾ cup light corn syrup
1 cup peanuts
1 tablespoon baking soda
1 teaspoon vanilla extract
½ stick of butter
Directions
- In a tall pot over medium to medium high heat, stir together sugar, water and light corn syrup.
- Bring to a boil.
- Stir with a large wooden or stainless steel spoon.
- Occasionally lift the spoon slightly and once it starts to spin a thread incorporate the peanuts.
- Stir continuously until light golden brown and looks foamy.
- Remove from the heat.
- Continuously stirring, add in the baking soda, vanilla and butter.
- Once butter melts, pour and spread onto cookie sheets lined with parchment paper and sprayed with oil.
- Leave to cool completely to harden.
