Mofongo
Ingredients
2 green plantains
⅓ cup oil
3 garlic cloves, peeled
½ teaspoon salt or to taste
pork rinds, store bought is fine (optional)
Directions
- Heat a skillet over high heat. Smash garlic cloves and add to oil. Heat for a couple of minutes. Then, pour into a cup and add salt, stir and set aside.
- Peel and cut plantains into 1 inch portions. Fry in hot oil until easily pierced by a fork or toothpick.
- Remove and place them into a food processor. Turn on the processor and slowly add the garlic oil and pork rinds.
- Mix until just combined. Do not overmix. It should not be smooth. Remove from the food processor and serve.
- The traditional way is using a pilón or mortar and pestle to make the mofongo. If you have a pilón, use that instead.
