This hushpuppies recipe yields crispy hushpuppies with a delightful interior.

Ingredients

  • 1-½ cups cornmeal

  • ½ cup all purpose flour

  • 2 teaspoons baking powder

  • ¾ cup milk

  • ½ cup finely chopped onion

  • 1 beaten egg

  • ½ tablespoon sugar or to taste

  • ½ tablespoon salt

Directions

  • In a large bowl, mix together all of the ingredients until combined.
  • Heat a skillet over medium heat.
  • Take about a tablespoon of the batter and place in the hot oil.
  • Continuously turn them as they will be done quickly and can burn.
  • Fry them until golden brown. 
  • Remove and place them on a paper towel lined plate to remove excess oil or a wire rack.
