CHICKEN AND GNOCCHI SOUP RECIPE: Comfort in a Bowl

Chicken and Gnocchi Soup

The recipe is not difficult and the results are a pillowy bowl of deliciousness.

Ingredients

  • 1- boneless chicken breast (diced)

  • 4-1/2 cups water

  • 3 chicken bouillon cubes

  • 2 tablespoons oil

  • 1 small onion (diced)

  • 1 garlic clove (minced)

  • 2 tablespoons all purpose flour

  • 1/4 teaspoon salt (bouillon cubes add salt)

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon dry thyme

  • 1/2 of a large carrot (grated)

  • 2 cups whole milk

  • 1/2 cup frozen spinach (thawed) If using fresh about 1 cup

  • 1-17.6 ounce package of gnocchi or fresh gnocchi

Directions

  • In a pan, heat water, chicken, and add 1 bouillon cube. When the chicken cooks, remove scum and set aside.  
  • In a medium sized pot, heat oil, onion and garlic.
  • Cook onions until translucent, then add flour and continue stirring.  Cook about 1 minute.  
  • Next add cooked chicken, and remaining ingredients, except gnocchi.
  • When it simmers, add gnocchi and cook for 3-5 minutes or until gnocchi rise to the top.
  • Enjoy.
