CHICKEN AND GNOCCHI SOUP RECIPE: Comfort in a Bowl

Chicken and Gnocchi Soup
The recipe is not difficult and the results are a pillowy bowl of deliciousness.
Ingredients
1- boneless chicken breast (diced)
4-1/2 cups water
3 chicken bouillon cubes
2 tablespoons oil
1 small onion (diced)
1 garlic clove (minced)
2 tablespoons all purpose flour
1/4 teaspoon salt (bouillon cubes add salt)
1/4 teaspoon black pepper
1/2 teaspoon dry thyme
1/2 of a large carrot (grated)
2 cups whole milk
1/2 cup frozen spinach (thawed) If using fresh about 1 cup
1-17.6 ounce package of gnocchi or fresh gnocchi
Directions
- In a pan, heat water, chicken, and add 1 bouillon cube. When the chicken cooks, remove scum and set aside.
- In a medium sized pot, heat oil, onion and garlic.
- Cook onions until translucent, then add flour and continue stirring. Cook about 1 minute.
- Next add cooked chicken, and remaining ingredients, except gnocchi.
- When it simmers, add gnocchi and cook for 3-5 minutes or until gnocchi rise to the top.
- Enjoy.
