I love to make flan or baked custard and have different recipe versions that I use. However, this one is the easiest to make.
Easy Flan or Baked Custard

2 cups milk
2 eggs
2 teaspoons vanilla extract
Directions
- In a pan over medium, heat 1/2 cup sugar until it melts and becomes an amber color. Watch it because it can burn.
- In a bowl beat eggs and vanilla. Next, in a pan, heat milk and 1/4 cup sugar. Dissolve sugar in milk. When it simmers add milk to eggs slowly so as not to cook the eggs.
- When caramel is ready, pour into ramekins or small baking loaf pans. Let cool and it will harden. Once it hardens add milk mixture.
- Place containers in a baking pan large enough to fit the ramekins or loaf tins. Carefully, fill a large baking pan with hot water more than half way.
- Bake in preheated 375 F oven for 45-60 minutes.
- Leave cool then place in the refrigerator for 1 hour. Next, detach flan from edges of pan and scrape off top of flan to remove film.
- Shake slightly to make sure it has detached then place a larger plate over the flan and carefully and quickly flip.
