These chocolate chip cookies come out chewy and soft.

Ingredients

  • 3/4 cup packed brown sugar

  • 1/2 cup white sugar

  • 1/2 cup melted butter (salted) ~ if using unsalted, add 1 teaspoon salt

  • 1 egg (beaten)

  • 1 teaspoon vanilla extract

  • 2-1/4 cups all purpose flour

  • 1/2 teaspoon baking soda

  • 1/2 cup chocolate chips

Directions

  • In a bowl combine sugars and butter.
  • Next, add the egg and vanilla. Mix thoroughly until they form ribbons—this step is crucial. For a visual demonstration, check out the video below
  • Add flour and baking soda.
  • Fold ingredients, do not over mix. Your cookies will come out cakey. Unless you like cakey cookies.
  • When almost combined, add chocolate chips.  Chill dough for 1-2 hours, up to 24 hours. Trust me, it makes a difference.
  • Preheat oven to 350 degrees F. 
  • Using a baking sheet lined with parchment paper, roll about 1 tablespoon of dough or use a small ice cream scoop.
  • Bake 12-15 minutes or until edges start to brown.
