Best Bean Soup: Comfort in a bowl
When I first encountered this bean soup recipe, I wasn’t particularly enthusiastic about trying it. Beans aren’t my favorite food, but I consume them for their health benefits.
However, after tasting the soup, I was pleasantly surprised by how delicious it turned out to be.
I can’t pinpoint whether it’s the variety of different beans or the seasoning, but I’ve grown to love them.
So, if you’re a bit skeptical about this recipe or not a huge fan of beans, I encourage you to give it a shot—I believe you’ll be pleasantly surprised too.
The beans used in this soup come in a variety pack, but if you can’t find them, consider mixing your favorite beans and following the rest of the instructions.
Just remember to use dry beans, as canned beans may become too mushy.

BEAN SOUP

Ingredients
20 ounce package of 15 bean soup
2 tablespoons oil
1-1/2 lbs beef short ribs
1 medium onion (diced)
3 minced garlic cloves
2 beef bouillon cubes
8 cups water
Directions
- Place beans in bowl and check if there are any stones.
- Cover beans with water and let sit for at least 8 hours. If the water is absorbed add more water.
- In a large pot add oil, and meat. Brown meat and set aside.
- Next add onions, garlic, bouillon cubes.
- Drain beans and add into pot with meat.
- Pour in water and add tomatoes, black pepper, salt and oregano.
- Cover and cook about 2 hours or until meat is tender.
