Potato Chip Cookies
When I first encountered this potato chip recipe, I was skeptical. The idea of combining potato chips and cookies in a recipe seemed unusual.
However, after baking my initial batch, I was smitten. These cookies turned out to be delicious, and the best part? You’d never guess they contained potato chips!
If you’re a doubter like me, I encourage you to give them a shot—I believe you’ll be pleasantly amazed.
Making these cookies with kids is a great way to get them interested in baking. Kids really enjoy crushing the potato chips and rolling dough into balls. In addition, they’ll love that they helped make this delicious treat.

Potato Chip Cookies

2 sticks margarine or butter
¾ cup sugar
2 teaspoons vanilla extract
1 ounce or ½ cup potato chips
2 cups all purpose flour
granulated sugar
Directions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bowl cream butter, sugar and vanilla.
- Crush potato chips and add to the bowl along with the flour. Mix well to combine.
- Chill for 1 hour.
- Scoop about a tablespoon of dough and roll into a ball.
- Place on a cookie sheet lined with parchment paper.
- Wet the bottom of a glass and press on sugar.
- Press glass on dough balls to flatten.
- Bake for 12-14 minutes or until edges are lightly browned.
