Amazing Vegetable Fried Rice

This vegetable fried rice offers a convenient way to enjoy Chinese-style rice in the comfort of your own home. This dish is versatile enough that if you prefer, you can swap the veggies and add your favorite meat or even shrimp. However, make sure to stir fry them before adding to the rice.

Most of the ingredients are readily available at home or can be easily purchased at almost any grocery store.

VEGETABLE FRIED RICE

Ingredients

  • 4 tablespoons oil

  • 1/2  tablespoon chicken bouillon powder

  • 1 teaspoon salt

  • 1/2 teaspoon sugar

  • 2 cups rice (rinsed and drained)

  • 1/2 teaspoon turmeric or egg shade

  • 1/2 white onion (diced small)

  • 2 tablespoons soy sauce

  • 1 cup frozen peas and carrots (steamed)

  • 1/2 cup chopped green onions (optional)

Directions

  • Heat a pot over medium heat and add 2 tablespoons oil, bouillon, salt and sugar.  
  • Add turmeric or egg shade and stir.
  • Next, add rice and water, stir, and cook until most of the water is mostly absorbed. (Don’t over stir the rice or it will come out mushy)
  • Once water is mostly absorbed, stir, cover and lower heat. Cook for about 30 minutes or until rice is cooked through.
  • When the rice is ready, fluff with fork and leave to cool or place in the refrigerator overnight. 
  • Using a skillet or wok, heat oil, and onions. Cook until translucent.
  • Add cooked rice and continue stirring.
  • Next, add soy sauce and combine.  
  • Then add peas and carrots and stir.
  • Top with green onions.
